J’s Journey to Basque #2

I didn’t expect to write a sequel for this one (as you will notice that the prequel did not have a number). As the Walnut Basque is around, we thought that Baker J was, at least, set with the Basque Cheesecake and would cause no more problems with it in the future. Wait, am I still expecting something from him?

As always, Baker J was doing night delivery shifts. There have been some issues with our inventory, so he was spending extra time working out more things. We were all aware that his list was long, but–I will be honest, we were expecting him to be a bit better after all these mistakes and efforts–he could make another mistake as soon as he returned to the kitchen at the second location!

Walnut Basque is not the only type of cheesecake we added to our menu. We have our Berry Basque Cheesecake back. And we also have another signature new menu: Moon Latte Basque Cheesecake! With four types present, we have been baking these almost every other day to meet such high demands.

For two days straight, the Berry Basque Cheesecakes were crumbling. This happens when the cheesecake is not cooled down enough. It was our Baker J that baked the Basque Cheesecakes that night. Because he works very late, he seems to think it is okay to do his prep any time he wants, as long as it falls under his working hour. Well, time to give him another lesson!

After blowing up the Berry Basques for two consecutive days, his face clearly said: “What did I do wrong? I did everything according to the recipe!” That was the last thing I expected from whom I heard the history of Basque Cheesecake from.

“Well, didn’t you know? For a Basque Cheesecake to be stable, it has to cool down for at least 16 hours in the fridge.” It seemed that he did not realize what time he was working. He closes the store at 4AM–even still, he bluntly told me that Basques were the last of the preps he does every day because it takes the longest. Well, if the front of the house needs to cut Basque Cheesecakes for morning service, when do you think they do it? 4PM?

It was a rare sight: a model and latte artist teaching a baker how to bake Basque Cheesecake, one of the easiest recipes in any pastry cookbook! It took long for me to make him realize his mistake, but afterwards, he seemed to understand.

That’s the story behind my posting today–I need to talk about the Basque Cheesecakes again! It was such an irony I had to post this!
