Juu’s Journal day 16: triple cheese leek Bun recipe!!!

Dear diary day 16

Today is Monday and it was pretty great 👍 I didn’t make any mistakes at work even left on time!!!

Starting at the beginning of my day, what I had for breakfast. I had 1 Avocado, 1 spicy Italian sausage wrap and 1 Jasmin tea.

Later in the day I made triple cheese leek Buns and Garlic buns!!! So today I will share the recipe for our triple Bun and tomorrow I will share the Garlic bun recipe 👍👍👍

For the triple Bun we make the Brioche bun from scratch using

● croissant dough

● AP Flour

● Tangzhong

● corn flour

●dry yeast

●sugar

●salt

●eggs

●improver s500

●milk

After making the dough we proof and bake at,

365°F for 20min.

For our leek Bun the filling is 2 components.

pesto mayo mix and leek mix.

The pesto mayo is a combination of mayo, pesto, sugar, and corn flour. And our leek mix is , leeks, sugar, 3 cheesies and potatoes. After preparing the fillings slice the bun 6 ways not too deep. Then with a butter knife spread the pesto mayo into each cut. To finish the filling take the red scoop and put a scoop of the leek mix on top on the opening of the cuts.

Bake at 350°F for 10min.

Garish, by drizzling sweet mayo on top and then torch it with fire for a smoky flavor and a pinch of parsley.

And that’s it!!!
