Juu’s Journal day 2: Wickeds Nanaimo Basque recipe

Dear diary, day 2…….. Wicked Cafe & Bakery’s Nanimo Basque Cheesecake Recipe ~

Today is a new day! It’s better to stay positive and to pick yourself up after you fall and keep trying and working hard!

Even though I am totally filled with anxiety but I took a hot shower at 6am but still I felt cold, so I put my lucky sweater on.

Anyways back to the real agenda,

today I will be writing about our very newest Nanimo Basque Cheesecake! It is quite simple to the original, and has the same base mix but instead for one full cake we add:

– 100g coconut flakes and mix that into the Basque mix and mix well.

– make sure to line your pan with parchment paper

– pop all the air bubbles in the mold

– bake for 50mins or until very dark brown at 400°F

– let it cool down and then set in the fridge over night

– the next day we slice into 8 slices

– finally we Garnish with chocolate syrup

That’s all there is to it and it is quite delicious!

Today I even got to try our new Nanaimo butter Bar.

It was even better then the cake, and it reminded me of the candy called bounty.
