Dear diary, it’s now been a full week since I started this new series on my blog, it’s slightly freeing and I am slowly learning to just take things as they are. The world is not fair, Fairness does not exist so it is foolish to expect it since I deserve nothing expect wake I make for myself. It is what it is the only thing I can do is improve and learn from what happens. And try to turn things into my favor.
Today is my last day off, and this morning like the previous morning I got up to give dona a long nice walk (around 1 hour long), then I had brunch at a nearby restaurant.
I arrived to the 2nd location around past noon, the cafe is quite slow today so I am working on some marketing and at 5pm I will go give gifts to our neighbors!
And for today’s menu recipe I will share about our, lovely lemon cakes!
The recipe is quite simple, as we just make pound cake batter with butter, flour, baking powder, eggs, vanilla extract and sugar.
And then add 30g of the mix to our special lemon 🍋 shape pan.
One pan can hold 12 Lemon cakes and we must make sure to grease the pan before adding the better since if not we could damage the pan.
we bake 338°F at for 15min.
To Garnish the mini lemon cakes we make a lemon icing and chocolate leaves.
The recipe for the icing is 500g of icing sugar and 120ml of lemon juice.
For the white chocolate leaf Garnish, it is.
– 1 cup of white chocolate
– 2 table spoons of heavy cream
– green food coloring
Then heat up in microwave for 1min aka chef Mickie.
They are so adorable and a perfect item to buy multiple for tea time with friends 💕
Back to the end of my day, I had to stay till 8:30 to check quality it, I feel so fat now 😛
So as soon as I returned home I took dona on a run for over 1 hour 🤣👍
It was a good late night run but now I just want to see sleep.
