But through trial-and-error we found the best combination, Our sourdough now contains 20% Rye to achieve a lovely balance between the fluffiness of white and the rich taste of rice, And so we have also developed the best technique for molding our bread into the best. For this project, we use the best starter in the market. Our Mother Dough, a.k.a the starter is more than a 150 years old, so let’s get into it!

Our Starters story begins in the 1850s, in the state of California. The Gold rush is a hit on the west coast, bringing in many immigrants with hopes for a better future. On there backs they bring a piece of home with them, and among them was a family from Europe that carried there love in there home towns bread starter. The combination of the European bread starter and the native California yeast, create a more chewy, sour and better offspring. With this creation and European bread making skill, it made San Francisco, the capital city of sourdough, in the America’s! Outliving, it’s original bakery, our 150 year old sourdough starter is tough to beat, The direct ancestor was saved, thanks to The Kensington market sourdough in Toronto. The Kensington Market Is one of the most popular spots in downtown Toronto. And now decades later, Wicked cafe produces the highest quality sourdough’s and breads in Vancouver.
